Vegetables make up a crucial part of a healthy diet regardless whether you’re trying lose weight, build muscle, or just generally feel better. They are packed with vitamins, minerals and micronutrients. They provide you with energy as well as aid in the regulation of your digestion system, and they can be a good option in times when you’re feeling hungry or need to snack. Many people find the thought of eating their vegetables downright infuriating.

SO DON’T EAT IT! Your mom isn’t standing over you , threatening to withhold dessert Why should you be subjected to that? Instead, here are some tips for incorporating vegetables into your daily diet in ways that you might actually enjoy instead of just putting up with:
1. Local shopping = fresh
Freshness is the most important aspect in the flavor and the vegan greens vitamins nutritional value of the produce. You’ll be amazed at how much fresher the product tastes at the local farmer’s market or farm stands. It’s worth paying a little more to purchase your produce from a more expensive grocer, even if it’s not harvest time. Also, learn how to identify when a product is in good condition or not (hint it’s vibrantly colored and blemish free.)
2. Take your time cutting your haul
So, you’ve got some great looking veggies But, like that treadmill that’s sitting in your garage, they won’t bring anything if you don’t take action with the vegetables! You should get in the habit of buying vegetables that can be eaten with minimal preparation (carrot sticks, snap peas,) but make sure to take the time once you’re home from the grocery store to prepare all the other vegetables. You can slice your peppers into tiny strips chop your kale, chop and chop your onions then store the vegetables in Tupperware or plastic bags. So, you don’t have to be concerned about cutting your peppers into tiny pieces, dicing your onions or getting out the knives when you cook your dinner. All you need to do is open the fridge to grab the items that you’ll require.

3. You can transform veggies into candy using high temperatures
Okay, maybe I’m exaggerating but bear with me. There’s a reason why people who want to shed pounds assume that they have to cook their vegetables. While steaming your vegetables is fine when you like them that method, they may be bland and overcooked. So, why do you settle for the bland when you can make use of the culinary magic of caramelization by grilling or roasting them instead? The natural sugars in vegetables are made sweeter by heating them to a very high temperature. This creates a chemical reaction that gives the vegetables a distinct and nutty flavor. Also, it creates a more textured texture than steaming.
Instead of cooking your vegetables in the microwave, coat them with a tiny bit of melted coconut oil and bake them in the oven between 425 and 450 degrees for about 10 minutes or toss them in olive oil, then place them on a hot grill. Grill until they are soft, then season with a little salt and pepper, and take a bite to. Some of my favorite dishes are cooked carrot sticks (they get SUPER sweet,) asparagus grilled, roasted green beans as well as roasted brussel sprouts (yeah… actually… don’t doubt it until you’ve tried it!) Though it requires some more focus and energy than using the microwave to make, the rewards are well worth it.
4. Can’t take vegetables head-on? Keep them hidden!
If you’re still not to the point that you are able to sit down and make an assortment of vegetables on your plate and eat them, you can always put them in other dishes! You can add diced onions and peppers in an omelet, some spinach to your post-workout shake or some cauliflower rice cauliflower potatoes, or make the most delicious chili with additional tomatoes, peppers and onions.
5. Are you still not eating enough vegetables? Try a supplement…
Although it’s not a substitute for fruits and vegetables, green supplements can help you get the minerals and vitamins you might not be getting if don’t eat enough. Especially when traveling or eating out often it’s difficult to get enough vegetables in your diet, so consider giving a green supplement the chance to grow a tree.
